How it captures them
Every one of those costs emails you an invoice or receipt. Connect Gmail once and ExpenseBot reads them, extracts vendor/date/amount, and writes each to a Google Sheet in your own Drive, categorized (plan, apps, processing, ads, COGS). Forward a PDF invoice or photograph a paper supplier receipt for anything not in email. It labels what it reads so nothing is double-counted, never sends email, and never deletes anything.

The categorized Sheet ExpenseBot builds is something you hand to your accountant or import into QuickBooks Online or Xero. It feeds your accounting — it's the clean-expenses layer underneath it, not the accounting itself.
Taxes
Your Shopify plan fee, app subscriptions, processing fees and ad spend are generally deductible business expenses, along with COGS and shipping. The gross sales figure Shopify shows is not what you're taxed on — your profit after these costs is. If a processor sends a 1099-K, it reports gross payouts, not profit.
